Bring a large pot of water to a boil. Add 4 lobster tails and cook for ⏱️ 5-8 minutes until they turn red. Remove the cooked tails from the water using tongs and place them in an ice bath for ⏱️ 5 minutes.

Remove the lobster from the ice bath then crack the shells and remove the meat. Cut the lobster meat into large chunks.

In a medium-sized bowl, add the lobster chunks, 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 2 tablespoons chopped fresh chives, and salt and pepper to taste. Gently stir to combine.
