Easy Green Salad
There is something so amazing about the freshness and simplicity of this salad. It's so quick to prepare and requires so little cooking. The mint and lime in the dressing add an incredible zing which is paired beautifully with the creaminess from the tahini. The courgette ribbons add such a beautiful touch too.

Preheat oven to 180°C / 160°C fan / 350°F.

Place the cashews on a baking tray and bake for about ⏱️ 10 minutes until they start to turn golden brown.

Cook the pearl barley according to the instructions on the pack, adding the frozen peas in the last ⏱️ 2-3 minutes to cook.

Chop the ends off the courgette and then using your julienne or vegetable peeler, peel the courgette lengthways to create long thin ribbons.

Add the mint to a bowl and mix in the rest of the dressing ingredients, it should end up quite thick and creamy.

Once the pearl barley and cashews are done, drain and remove from the oven.

Leave the cashews to cool for a few minutes and then place them in your food processor and blitz for a few seconds until they form small chunks.

Remove from the processor and leave to one side.

Place the rocket in your salad bowl as your base, then add in the courgette ribbons, peas, avocado, cashews and then pour on your dressing and enjoy!
