Easy Berry Flapjacks
Easy to make and ready in half an hour, these fruity flapjacks are the perfect afternoon treat or lunchbox snack for the week ahead. Top tip: make sure you do use porridge oats for these, if you use jumbo oats they won’t stick together

Preheat oven to 180°C fan / 400°F. Grease and line a 20cm / 8″ square baking tin with oil and baking parchment.

Put the olive oil, sugar, maple syrup, water and lemon zest into a saucepan and bring to a simmer (don’t worry if it splits slightly). Stir in the porridge oats and a pinch of salt. Pour the mixture into the lined baking tin and press down with the back of a spoon until level.

Sprinkle over the frozen berries, then lightly press them into the flapjack mixture. Bake for ⏱️ 30 minutes until golden brown. Leave to cool completely in the tin before lifting out and slicing into 9 squares. Store in an airtight container.
