Prepare your pie crust dough and chill in the refrigerator for at least ⏱️ 2 hours.

In a medium saucepan, combine diced apples, sugar, butter, cinnamon, nutmeg, and allspice. Cook over low-medium heat, stirring occasionally, until it simmers. Let it simmer for ⏱️ 2 minutes, then remove from heat and let the filling cool for ⏱️ 30 minutes.

Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.

On a floured surface, roll out one disc of dough to about 1/8-inch thickness. Use a 3.5-inch round cookie cutter to cut out circles. Reroll scraps as needed. Repeat with the second dough disc. Chill all circles for ⏱️ 15 minutes.

Arrange half the dough circles on the prepared baking sheets. Place about 2 tablespoons of apple filling in the center of each. Cut a few small slits in the remaining dough circles (for top crusts).

Place a top crust over each filled circle. Press the edges to seal, then crimp with a fork. In a small bowl, beat the egg with the milk to create an egg wash.

Brush the tops of the hand pies with the egg wash and sprinkle with coarse sugar, if desired.
