Dutch Pear Pie with Spiced Caramel Sauce

Preheat oven to 400°F with oven rack in lowest position. On a lightly floured surface roll dough to a 13-inch circle. Fit into a 9-inch deep-dish pie plate. Trim excess to 1 inch, fold edges under, and crimp. Freeze ⏱️ 20 minutes.

Make the crumble topping: Stir together flour, oats, brown sugar, and salt in a bowl. Work butter into dry ingredients, using fingertips, until completely incorporated. Cover and chill.

Make the filling: Line a rimmed baking sheet with foil. Whisk together granulated sugar, cornstarch, salt, cinnamon, ginger, nutmeg, and allspice in a bowl. Add pears, lemon juice, and brandy, and toss to coat. Transfer filling and any juices into piecrust, and place on prepared baking sheet. Top with crumble topping, breaking into clumps as needed. Bake ⏱️ 30 minutes. Reduce heat to 375°F, and bake until golden brown and juices are thickened and bubbling, 30 to ⏱️ 35 minutes. Cool completely on a wire rack.

Make the spiced caramel sauce: Bring cream and sugar to a boil, stirring often, in a medium saucepan over medium-high heat. Boil gently for ⏱️ 5 minutes. Remove from heat and stir in brandy, butter, vanilla, salt, cinnamon, nutmeg, ginger, and allspice.
