Double Chocolate Ice Cream
Easy to make, but hard to resist! This chocolate ice cream with chocolate chunks may not be the most adventurous of flavors, but it's the one that I will always turn to time and time again.

Place the chopped chocolate in a large bowl.

Whisk the sugar and cocoa powder together to break up any lumps of cocoa.

Combine the sugar and cocoa powder with the heavy cream, milk, corn syrup and salt in a medium saucepan. Bring the mixture to a simmer, whisking regularly to dissolve the sugar. Remove the pan from the heat and stir in the vanilla extract and bourbon (if using).

Pour this mixture over the chopped chocolate and stir until melted and smooth.

Refrigerate or chill the mixture over an ice bath until it is very cold. Refrigerating overnight is a great idea.

Transfer the mixture to a pre-chilled ice cream maker and churn into ice cream.

Serve soft serve style or transfer to a container and freeze for at least ⏱️ 2 hours for a harder, scoopable texture.
