Melt the butter in a large saucepan or pot over medium-high heat, add the onions, carrots and celery and cook until tender, about ⏱️ 7-10 minutes.

Mix in the garlic and cook until fragrant, about ⏱️ 30 seconds.

Add the broth, brine and potatoes, bring to a boil, reduce the heat and simmer until the potatoes are tender, about ⏱️ 10-15 minutes.

Mix the sour cream and flour before mixing into the soup, and simmering until it thickens, about ⏱️ 3-5 minutes.
