Preheat oven to 500°F with racks in the lower and upper thirds. Pour oil into a Detroit-style or 9-by-13-inch baking pan.

Press dough into the bottom and1/2 inch up the sides of the prepared pan. Top with 3/4 cup pepperoni. Top with marinara, spooning it in three rows lengthwise. Sprinkle with oregano. Top with mozzarella and Monterey Jack, being sure to push several pieces between the crust and the sides of the pan. Top with remaining 3/4 cup pepperoni.

Bake on the bottom rack until crust is golden brown and cooked through, 18 to ⏱️ 20 minutes. Switch oven to broil and pizza to top rack. Broil until cheese is golden brown and bubbling, 1 to ⏱️ 2 minutes. Let rest on a wire rack ⏱️ 5 minutes. Remove from pan with an offset spatula and transfer to a cutting board; cut into squares.
