Dark Chocolate Truffles
These dark chocolate truffles are the ultimate snack or present. The thick coconut milk creates a creamy texture, with a richness coming from the dark chocolate and cacao powder. You can stir ingredients through the melted chocolate mixture to make delicious flavoured truffles; chopped pistachios, chopped hazelnuts or crunchy roasted buckwheat groats all taste delicious.

Place the dark chocolate in a pan over a low heat. Heat until melted, mixing to ensure the chocolate doesn’t burn.

Once melted, add the coconut milk (or coconut cream), maple syrup and 3 tablespoons of cacao powder. Mix well until a thick, smooth mixture forms.

At this point, remove from the heat and leave the mixture to cool down a little before placing in the fridge for ⏱️ 15-20 minutes. You want the mixture to be hard but not completely set.

Once hard enough to shape, scatter some reserved cacao powder over a baking tray. Use a tablespoon to scoop out balls of the mixture and roll them into ball shapes using your hands.
