Prepare The Dandelion Tea: Steep about three cups of dandelion flowers (green parts removed) in four cups of boiling water for four to six hours. Strain and measure out two cups.

Combine The Ingredients: Pour two cups of tea into a large heavy bottomed pot. Add raw sugar, honey, ginger, turmeric, and strained lemon juice.

Dissolve The Sugar: Place pot over medium heat. Stir gently until sugar is completely dissolved.

Boil To Hard Crack Stage: Insert a candy thermometer into the pot. Stop stirring. Let mixture come to a boil until it reaches 300 degrees F (hard crack stage).

Manage Sugar Crystals: If sugar crystals form on pot sides, use a wet pastry brush and gently brush them down into the syrup.

Remove From Heat: Once 300 degrees F is reached, immediately remove pot from heat to a cool surface.

Pour Into Molds: Carefully pour hot syrup into silicone candy molds, or onto a silicone mat or a greased baking sheet.

Cool Completely: Allow candy to cool completely until rock hard (⏱️ 20-30 minutes).

Remove And Break Pieces: Pop out of molds or break into bite-sized pieces from the sheet.

Toss In Powdered Sugar: To prevent the pieces from sticking together, toss them in a bowl of powdered sugar.
