Mix all Dan Dan sauce ingredients until smooth. Set aside.

Grate ginger. Slice spring onion whites. Place greens in ice water.

Julienne cucumber into matchsticks and set aside.

Sear beef mince undisturbed for ⏱️ 3-4 minutes until deeply caramelised. Break up and cook through.

Add spring onion whites and ginger. Cook ⏱️ 2 minutes. Deglaze with soy sauces and Shaoxing wine. Cook ⏱️ 1-2 minutes until glossy.

Blanch bok choy ⏱️ 60 seconds. Cook noodles in same water. Reserve 50ml noodle water before draining.

Whisk noodle water into Dan Dan sauce. Toss drained noodles through sauce immediately.

Divide noodles into containers. Top with beef, bok choy, cucumber and spring onion greens. Finish with chilli crisp.
