Curried Sweet Potato Hummus
This quick and easy hummus is made extra filling and satisfying with the addition of a whole baked sweet potato. You can also use a microwave instead to save time. Just prick the sweet potato all over with a fork and place in a microwave-safe bowl with 1 teaspoon water and cover. Microwave on high until tender when pierced with a fork, about 5 minutes. Let cool. Discard water. Split potato and scoop flesh into bowl; discard skin.

Place all ingredients in a blender and blitz until smooth. Gradually add some water to help it blend, we find that about 150ml is the right amount.

Store in the fridge. This hummus keeps well for up to one week.
