Crunchy Peanut Indonesian-Style Salad
Inspired by the traditional Indonesian salad Gado Gado (meaning ‘mix mix’), this fresh crunchy salad is a celebration of textures and flavours. A medley of seasonal vegetables is tossed with an incredible sweet and spicy peanut sauce that really does make the dish.

Bring a large pan of salted water to the boil and add the potatoes. Simmer for 15–⏱️ 20 minutes until softened. Drain and leave to steam-dry.

Meanwhile, put the oil in a large frying pan over medium-high heat. Once hot, add the tofu and fry for 4–⏱️ 5 minutes until crisp on all sides. Tip in the beansprouts and fine beans and fry for 3–⏱️ 4 minutes until they begin to soften. Set aside to cool completely.

While everything is cooling, make the sauce. Mix all of the sauce ingredients together until smooth.

Place the carrots, cabbage, coriander, potatoes, tofu, beansprouts and fine beans into a large bowl and toss together. Drizzle over the sauce and mix, ensuring everything is coated. Sprinkle over the peanuts to serve.
