Add the pork fat side up to the crock pot; then season with salt and pepper.

Next, combine the apple cider, applesauce, brown sugar sage and flour in a bowl; then whisk until smooth.

Pour the liquid on top of the pork, cover the crock pot; then cook on high for ⏱️ 6-7 hours or low for ⏱️ 8-9 hours. (The pork is done when you can easily slide a fork in and out of the meat.)

Remove the pork from the crock pot and place on a cutting board. Cut the pork into 1/2-inch thick slices and place on a serving platter. Drizzle some of the sauce on top of the meat; then add the remaining sauce to a gravy boat.
