Place potatoes in a large pot; cover with cold salted water. Simmer until potatoes are tender when pierced with a sharp knife, 18 to ⏱️ 22 minutes. Drain and cool until able to handle.

Preheat oven to 450 degrees F. Combine oils in a 9"-x-13" or other shallow 3-quart baking dish. Use your hands to break potatoes into roughly 2" pieces; add to baking dish and gently toss to coat. Season with salt. Roast, turning halfway through, until deeply golden brown and crispy, 30 to ⏱️ 35 minutes. Season with salt.
