To make the crispy tofu, mix the flour with 4 tablespoons of cold water to form a thin paste. Put the breadcrumbs onto a plate with a pinch of sea salt. Dip the tofu into the flour mix, shake off any excess and then put it into the breadcrumbs, tossing until the tofu is coated. Repeat with all of the tofu slices.

Heat a drizzle of olive oil in a frying pan over medium heat and fry for 2–⏱️ 3 minutes on each side until golden and crispy all over. Alternatively, if you want to bake them instead, heat oven to 200°C / 180°C fan / 400°F. Place the breaded tofu onto a lined baking tray, drizzle with oil on both sides and bake for 15–⏱️ 20 minutes until golden and crisp.

To make the dressing, place all of the ingredients into a bowl and whisk to combine. Adjust the seasoning to taste.

Arrange the prepared salad components in serving bowls with the fried crispy tofu on the side. Serve drizzled with dressing and sprinkled with coriander, peanuts and chilli flakes, if desired.
