Adjust oven racks to lower and upper positions and preheat to 500°F. Line two large rimmed baking sheets with foil and place them in the oven to get hot.

Place potatoes in a large pot and cover with 1 inch of cold water. Add 2 tablespoons of kosher salt and 1 tablespoon of white vinegar. Bring to a boil, then reduce to a simmer and cook for ⏱️ 5 minutes until exteriors are just tender.
