Make the potatoes: Preheat the oven to 400˚. Toss the potatoes with the olive oil, kosher salt, pepper and cumin in a large bowl.

Melt the butter in a large cast-iron skillet over medium heat. Add the potatoes cut-side down and cook, without touching or turning, until golden, 6 to ⏱️ 8 minutes. Toss the potatoes, then transfer the skillet to the oven and roast until the potatoes are soft in the center with a deep golden crust, 18 to ⏱️ 20 minutes.

Make the cilantro-garlic sauce: Meanwhile, mix together the cilantro, garlic, lime zest, lime juice, jalapeño, olive oil, salt and pepper in a small bowl. Transfer the potatoes to a platter. Top with the sauce and sprinkle with flaky salt.
