Line a rectangular tray (approximately 30cm x 24cm / 12″ x 9″) with parchment paper.

Heat the stock and 4 tablespoons of oil in a large saucepan and bring to the boil. Pour in the polenta, add the rosemary and a pinch of salt; stir continuously and cook for ⏱️ 3 minutes to thicken. Tip the polenta onto the baking tray and spread out in an even layer. Chill in the fridge for ⏱️ 2 hours until set, or leave in the fridge overnight.

Preheat oven to 200°C fan / 425°F. Line a large, flat baking tray with parchment paper. Remove the polenta from the fridge and cut into 3cm / 1½″ long fries. Drizzle over the remaining olive oil and sprinkle with flaky sea salt.

Arrange the fries on the lined baking tray in a single layer. Bake for 35–⏱️ 40 minutes until golden, turning halfway through.
