Heat oil in a medium pot to 325°F. Line a plate with paper towels. Add half of okra to oil, and stir to prevent them from sticking together. Fry until bubbles subside and white part of okra has turned golden brown and crispy, 2 to ⏱️ 4 minutes. Use a slotted spoon to transfer to prepared plate. Season with salt. Repeat with remaining okra.

Spoon Yogurt Dressing onto a serving platter. Top with tomatoes; season with salt. Top with feta and crispy okra. Garnish with benne seeds.

Combine yogurt, lemon juice, coriander, cumin, and paprika in a bowl. Season with kosher salt and set aside.
