In a separate bowl, beat the eggs, add the chicken, and toss to coat.3. Dredge the chicken in the crumbs, pressing to fully coat.4. To bake: Arrange on the baking sheet, drizzle with olive oil, and bake 20–⏱️ 25 minutes, until crisp and golden.5. To pan-fry: Heat an oven-safe skillet over medium heat with 4 tablespoons butter and 2 tablespoons olive oil. When shimmering, cook the chicken in batches until golden, 3–⏱️ 4 minutes per side. Add the remaining butter, baste the chicken all over, then transfer to a baking sheet and bake ⏱️ 10 minutes, until cooked through.6.
