Crispy Buffalo Wings
I've partnered up with Maggi Lazenby to pay homage to the humble bottle of Worcestershire Sauce most of us have in our pantry cupboards. Below I share just a few ideas on how to use Maggi Lazenby sauce AND of course, the recipe for my crispy buffalo wings with a simple homemade hot wing sauce and blue cheese sauce, both using the all-important Worcestershire sauce. Apparently, the proper way to pronounce it is “woo-stuh-sher”. Confession, I pronounce it as “woes–ter’’ sauce. Lol. How do YOU pronounce this mystic seasoning sauce? Developed in Worcester, England, in the 1830’s. Originally, a fermented mixture of anchovies or fish extract, molasses, tamarind or vinegar, an array of aromatics (e.g. garlic and onion) and seasoning making this sauce all kinds of savoury, salty, sweet and tangy. The OG of umami, so to speak. Maggi Lazenby Worcestershire Sauce is specifically made from natural ingredients and spices (ginger, nutmeg, coriander and cloves). For me in particular, Lazenby sauce evokes memories of the weekend breakfast and braai table. My mom or ouma cooking a stew of sorts with a trusty Lazenby bottle next to the stove and my dad proudly drenching braai meat with his Lazenby marinade. And just recently, my husband curing his meat in preparation for his first batch of biltong here in Kuwait.

📝 Preparation Steps

Mix cornflour and cake flour in a large bowl. Season well with salt, pepper and a touch of smoked paprika.

Pour buttermilk into a large bowl.

In batches, shake winglets in the flour mixture until well coated.

Then using a pair of tongs, place coated wings into the buttermilk milk bowl. Shake around until coated.

Then transfer back into the flour mixture for a final shake for a light coating.

Place coated wings on a tray and chill in the fridge until ready to fry.

Prepare the hot buffalo sauce: Place all the listed ingredients in a pot and heat until simmering. Allow to simmer for ⏱️ 10 minutes.

Prepare blue cheese sauce/dip by simply mixing all the listed ingredients together vigorously. Season to taste.

Heat enough cooking oil for deep frying. Fry the wings in batches in moderately hot oil until wings are golden and crispy. This should take about ⏱️ 12 minutes.

Submerge the fried crispy wings briefly in the prepared buffalo hot sauce.

Serve wings immediately with remaining hot sauce, the blue cheese sauce and celery sticks
