Melt 2 tablespoons butter in a medium saucepan over medium-high heat. Add onion and cook, stirring occasionally, until golden, 6 to ⏱️ 8 minutes. Add farro and cook, stirring, until fragrant, 2 to ⏱️ 4 minutes. Add wine and cook until syrupy, ⏱️ 1 minute. Add stock and bring to a boil. Reduce heat to medium, cover and cook until liquid is absorbed and farro is tender, 20 to ⏱️ 25 minutes. Season with salt and pepper.

Melt remaining 2 tablespoons butter in a large skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, until golden, 3 to ⏱️ 5 minutes. Add roasted garlic and cook, breaking it up with a spoon, until smooth, ⏱️ 1 minute. Stir in farro, walnuts, and parsley. Season with salt and pepper.

Serve garnished with parsley.
