Creamy Tomato Pasta Bake

Sun-dried tomatoes are simmered with oregano, balsamic and garlic, then tossed through pasta, topped with vegan white sauce and finished with a lovely layer of crispy breadcrumbs — a winning combination. Preheat oven to 180°C fan / 390°F, grill setting; or heat the grill to its highest setting.

Place the bread into a powerful blender and blitz until it forms breadcrumbs; then place to one side.

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic, sun-dried tomatoes and a pinch of salt. Cook for 5–⏱️ 10 minutes until the onions become soft. Stir through the oregano, then the tomato purée, tinned tomatoes and balsamic vinegar. Mix well and leave to bubble for 10–⏱️ 15 minutes until the sauce becomes thick and delicious.

While the tomato sauce simmers, cook the pasta according to packet instructions. Once cooked, drain and stir into the tomato sauce.

To make the white sauce, place a medium saucepan over medium–high heat and add the olive oil and flour. Whisk to form a paste and then continue whisking over the heat for 2–⏱️ 3 minutes. Slowly stream in the milk, whisking constantly until you have a smooth thickening sauce (this should take a further ⏱️ 3 minutes or so). At this point, turn down the heat and add the nutritional yeast, mustard, pepper and salt.

Pour the tomato pasta into a baking tray and spoon the white sauce over the top. Scatter with the breadcrumbs and a crack of black pepper. Bake in the oven, under the grill, for 5–⏱️ 10 minutes until the top becomes lovely and golden.
