Creamy Tomato, Basil & Artichoke Orzo
This is exactly the sort of dish we’ve been making when we want something comforting but can’t face spending ages cooking. The orzo turns perfectly creamy, while the charred tomatoes, lemon and basil keep everything fresh and vibrant. Made with mostly store-cupboard ingredients, it’s perfect for busy midweek evenings.

Warm a shallow casserole dish or sauté pan over medium–low heat and add 1 tablespoon olive oil. Add the garlic and chilli flakes (if using) and cook for ⏱️ 1 minute until fragrant.

Add the shallots with a pinch of salt and cook for 8–⏱️ 10 minutes, stirring often, until softened and glossy.

Stir in the orzo, vegetable stock, coconut milk and artichokes. Simmer for 15–⏱️ 20 minutes, stirring often to prevent the orzo from sticking.

Meanwhile, warm a medium frying pan over high heat and add the remaining 1 tablespoon olive oil. Add the tomatoes and cook for 3–⏱️ 4 minutes until softened and the skins are just beginning to split. Remove the pan from the heat, season generously and set aside.

Once the orzo is cooked and the dish is creamy, stir through the lemon zest, juice and tomatoes until warmed through. Scatter over the basil and finish with a generous crack of black pepper.
