In a deep saucepan cook onion in 2 tbsp of oil over medium heat for ⏱️ 3-4 minutes. Add carrot and garlic and cook for 1 more minute. Add canned tomatoes, chicken stock, pesto, balsamic vinegar, thyme, salt pepper and bring to a boil. Reduce heat to medium-low and simmer for ⏱️ 15-20 minutes.

Transfer soup to a blender (in batches) and blend until smooth.

Pour soup back in the saucepan and add cream. Stir until combined. Add spinach and cook for ⏱️ 5 minutes.

Remove from heat. Serve warm. Garnish with parsley and drizzle with oil or heavy cream.
