Preheat your oven to 350°F (175°C) with an oven rack in the middle position. Line a baking sheet with foil for easy cleanup. Wash and dry the sweet potatoes, then prick each potato three to four times with a fork to allow steam to escape. Place on the prepared baking sheet.

While the potatoes bake, prepare the butter mixture. In a medium saucepan, melt 6 tablespoons of unsalted butter over medium heat. Once melted, stir in the maple syrup, milk, 1½ teaspoons salt, and ¼ teaspoon freshly ground black pepper. Remove from heat and set aside.

Once the sweet potatoes are cooked, carefully remove them from the oven and let them cool enough to handle. Cut each sweet potato in half lengthwise. Using a large spoon, scoop the warm flesh directly into the saucepan with the butter mixture.

Place the saucepan back over low heat. Use a potato masher or a large fork to mash the sweet potatoes until they are smooth and creamy, to your desired consistency. The low heat will help keep everything warm and make mashing easier.
