Creamy Super Green Salad
This creamy salad is the perfect recipe for spring. The dressing, based on our beloved classic magic salad dressing, is boosted with spinach for a bright colour and goes brilliantly with the crispy croutons, crunchy seeds, chunks of potatoes, green veggies and fresh leaves.

Preheat the oven to 220C / 200C fan / gas 7

Place a pan of salted water over a medium heat and bring to the boil. Add in the new potatoes and simmer for ⏱️ 20 minutes until soft, in the last ⏱️ 3 minutes add the green beans and in the last ⏱️ 30 seconds add in the asparagus. Once boiled, drain, and leave to cool.

Meanwhile, add the bread, pine nuts, pumpkin and sunflower seeds, chilli flakes and olive oil to a large flat tray, tossing so everything is coated in oil and season with a pinch of flaky sea salt and pepper. Roast for ⏱️ 5- 8 minutes, tossing halfway through, until crispy and golden. Leave to cool.

While that cooks, make the salad dressing. Put the spinach into a bowl and pour over some boiling water so it wilts.. Leave for ⏱️ 30 seconds then drain and squeeze out any excess water. Add the spinach into the blender along with all the dressing ingredients and 2 tbsp water until you get a smooth green dressing.

Toss the cooked potatoes and veggies with the rocket, chives, spring onions and half of the crispy croutons and seeds. Drizzle over the creamy green sauce and toss to coat everything. Sprinkle with the remaining crispy seedy croutons to finish.
