Slice the top quarter-inch off the head of garlic. Place it on a piece of aluminum foil, drizzle with olive oil and a pinch of salt. Wrap the foil loosely and roast for ⏱️ 30-40 minutes until the cloves are soft and golden brown. Let it cool slightly.

While the garlic roasts, peel and chop the potatoes into 1-inch chunks. Place them in a saucepan with 1/2 teaspoon of salt and cover with cold water.

Bring the water to a boil, then reduce to a simmer. Cook for about ⏱️ 15 minutes, or until the potatoes are fork-tender. Drain thoroughly.

In a small pan or microwave-safe bowl, gently warm the heavy cream and butter until the butter is melted.
