Creamy Potato Salad
This potato salad is the perfect side dish for any summer BBQ or big dinner. The creamy mustard dressing tastes delicious with the lemon juice and fresh dill. It all comes together so nicely once stirred through the soft, fluffy new potatoes.

Place a pan of salted water over a medium heat and bring to the boil.

Boil the new potatoes for ⏱️ 20 minutes until soft. Once boiled, drain and halve.

Drain the cashews and place them into a blender, along with the almond milk, mustard, vinegar, lemon juice and salt. Pulse until a smooth paste forms, you may need to add a little more almond milk if it feels too thick.

Place the halved potatoes into a large bowl and mix through the cashew dressing, chopped onion, dill, parsley, lemon zest and another pinch of salt to taste.
