Prepare 1 package Smithfield Boneless Pork Shoulder Seasoned Carnitas according to package directions. Set aside. Bring water in a large pot to a boil and cook 8 ounces penne pasta until al dente.

In a medium-sized skillet over medium-high heat add 1 tablespoon olive oil. Add 1 sliced red bell pepper, 1 sliced green bell pepper, and cook ⏱️ 2-3 minutes or until tender. Set aside on a plate.

Add 2 cups heavy cream, ½ cup sour cream, ¼ cup parmesan cheese, 1 teaspoon chili powder, ¼ teaspoon cumin, and ¼ teaspoon paprika to the skillet. Whisk and let simmer until it starts to thicken. Add pork and peppers to the sauce and toss until coated and heated through.
