Creamy Peas On Toast

Pour the peas into a pan of salted boiling water and cook for around 2–⏱️ 3 minutes, until just cooked.

Drain the peas and tip back into the saucepan along with the garlic and olive oil. Cook for 2–⏱️ 3 minutes until fragrant.

Remove from the heat, then add the yoghurt, tahini, lemon juice, a pinch of salt and plenty of black pepper. Roughly crush the peas with a potato masher to create a creamy, chunky texture.

Toast the bread, then pile the smashed peas on top. Delicious with sautéed mushrooms and a sprinkle of dried red chilli flakes.
