Heat the olive oil in a large frying pan over medium heat. Add the onion, leeks and mushrooms, plus a large pinch of flaky sea salt. Fry for ⏱️ 15 minutes until softened and the water from the mushrooms has evaporated. Stir through the garlic and paprika and fry for ⏱️ 30 seconds.

Pour in the coconut milk, 150ml / 5 fl oz boiling water, crumble in the stock cube and add the miso paste. Stir and bring to the boil, then simmer for ⏱️ 30 minutes until thick and luxurious. Season with flaky sea salt and a good crack of black pepper.

Stir through the tahini and ½ of the chives. Serve with rice and top with the remainder of the chives.
