Soak the almonds in the vegetable stock and set aside to soften for 20–⏱️ 30 minutes.

Warm a glug of oil in a large saucepan over medium heat. Add the garlic and cook for 1–⏱️ 2 minutes, until just golden.

Stir in the leeks, onion, celery, thyme leaves, bay leaf and a pinch of salt. Cook for 15–⏱️ 20 minutes, stirring every now and then, until softened but not coloured.

Add the stock, almonds, lentils, and spinach, stirring until the spinach has wilted. Blitz until smooth using a stick blender, or for an extra silky texture, use a high-speed blender.

Warm gently until hot through, then season to taste. Delicious topped with crispy garlic and thyme, and served with fresh sourdough.
