Boil a large pot of salted water. Cook pasta according to package directions until al dente. Reserve 1/4 cup of pasta water before draining.

While pasta cooks, heat 1 tbsp of olive oil in a large skillet over medium heat. Add cubed chicken, season with salt, pepper, paprika, and Italian seasoning. Cook for ⏱️ 5-6 minutes until browned and cooked through. Remove chicken and set aside.

In the same skillet, add the remaining 1 tbsp of olive oil and the minced garlic. Sauté for ⏱️ 30-60 seconds until fragrant, being careful not to burn it.

Sprinkle flour over the garlic and stir to form a roux. Cook for ⏱️ 30 seconds to remove the raw flour taste.

Slowly pour in the chicken broth and milk, whisking constantly to prevent lumps. Continue whisking for ⏱️ 2-3 minutes until the sauce starts to thicken.
