Preheat the oven to 160°C fan / 320°F. To make the sauce, put the cashews and water into a saucepan and bring to the boil. Boil fiercely for ⏱️ 5 minutes, then add the carrot, potato, onion and celery. Continue to simmer until all the vegetables are tender, at least ⏱️ 10 minutes.

Drain and transfer to a blender. Add all the remaining sauce ingredients and season with salt. Blend until smooth.

Bring a large pan of water to the boil with a pinch of salt. Add the macaroni and cook according to the packet instructions. Place the spinach in a colander, pour the macaroni into the colander over the spinach to wilt it. Drain well then place in a bowl. Add the sauce, basil and peas and mix well to combine. Pour the mixture into a 25 × 19cm / 10 × 8″ baking dish.

For the topping, place the breadcrumbs, olive oil and nutritional yeast in a bowl and stir to combine, ensuring that all the breadcrumbs are evenly coated. Sprinkle over the pasta.

Bake for 35–⏱️ 40 minutes until golden. Garnish with the reserved basil leaves before serving.
