Preheat oven to 170C / 190C fan / 375F

Place the sweet potatoes into a baking tray with a drizzle of olive oil and salt, cook for ⏱️ 30-35 minutes until soft, adding the kale in the last ⏱️ 5-8 minutes to crisp.

Place the farro in a pan of boiling water and cook for ⏱️ 10-12 minutes.

Once cooked, drain and rinse under cold water to stop from any further cooking.

Once the sweet potatoes and kale are cooked, mix everything together in a large bowl.

Top with chopped walnuts before serving.
