Creamy Cottage Cheese Tuscan Chicken Pasta
A creamy tuscan style pasta with sun-dried tomatoes, parmesan, and spinach that swaps the heavy cream for pureed cottage cheese!

Start cooking the pasta as directed on the package.

Meanwhile, heat the oil in a large pan over medium heat, add the chicken, seasoned with the onion powder, garlic powder, paprika, oregano, salt and pepper, and cook for ⏱️ 5 minutes.

Add the broth, Italian seasoning, and sundried tomatoes, bring to a boil, reduce the heat and simmer for ⏱️ 5 minutes.

Turn off the heat, wait ⏱️ 5 minutes, mix in the parmesan, cottage cheese, spinach and lemon juice, mix and let the spinach wilt.
