Place a large pan over medium heat and add a teaspoon of olive oil. Once warm, add the onion and a pinch of salt. Mix well and cook for ⏱️ 5 minutes until the onion is soft.

Mix through the garlic, ginger and curry powder and cook for one minute. Add the red lentils, coconut milk and stock. Mix well and cook for 30–⏱️ 35 minutes or until the red lentils are soft.

Stir through the frozen mixed vegetables, spinach and lime juice.

Once ready to serve, swirl the coconut yoghurt on top and finish with a sprinkling of coriander.
