We can’t get enough of this creamy chocolate pudding right now. We’ve been making a big batch at the beginning of the week and looking forward to it every morning for breakfast. It’s such as easy, nourishing way to start the day. Delicious with fresh berries and a dollop of yoghurt.

Place the chia seeds, maple syrup, cacao powder, plant-based milk, yoghurt and salt (if using) into a bowl, or airtight container and mix well until fully combined.

Place in the fridge and chill for at least an hour, or overnight, until thickened. Stir before serving, adding a splash more milk to loosen if needed. Delicious with a dollop of yoghurt, fresh berries and chopped dates.
