Creamy Chickpeas & Mushrooms
This recipe is the perfect hearty dinner for anytime in the week. The thick creamy sauce tastes delicious mixed through the cooked mushrooms and chickpeas. We love to use oyster mushrooms for their amazing flavour and texture, but you can use any mushrooms you have at home.

Make the creamy sauce by placing all of the ingredients into a powerful blender and blending until smooth. You can add a dash more almond milk if you want it a little thinner.

Place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt. Cook for ⏱️ 5-10 minutes until soft. Add the mushrooms, mix well and cook for ⏱️ 5 minutes until they begin to soften.

Once the mushrooms are soft, add the drained chickpeas and 3 tablespoons of the creamy sauce. Mix well and cook for ⏱️ 10 minutes until everything is thick and creamy, adding more of the creamy sauce if you want it more saucy. Store any extra sauce in an airtight container in the fridge for a week.
