Creamy Cauliflower Pasta With Dill & Caper Salsa
This delicious pasta is topped with a bright and punchy salsa that perfectly contrasts with the creamy cauliflower sauce. If you don't have any cauliflower leaves, don't worry; the salsa will still be delicious without, but we like to find ways to use them up!

Bring a pot of salted water to the boil and add the pasta. ⏱️ 2 minutes before the pasta is cooked, add the cauliflower florets. Drain, reserving a generous amount of the pasta cooking water.

While the pasta is cooking, make the creamy sauce. Place the olive oil in a saucepan over medium heat and then add the flour, whisking until combined and thickened. Then slowly add the oat milk, whisking constantly to ensure there are no lumps. Add the mustard, nutritional yeast and season to taste with salt.

For the salsa, heat a small amount of olive oil in a frying pan over medium heat. Add the cauliflower leaves and sauté until wilted. Then add the capers, dill and deglaze the pan using the red wine vinegar.

Return the drained pasta and cauliflower to the pan that you cooked them in. Add the creamy sauce and a splash of pasta cooking water and cook over low heat, stirring constantly for about a minute, until creamy and glossy. Serve in a bowl topped with the salsa.
