Creamy Cauliflower Pasta
This bowl of creamy pasta is a delicious winter warmer. Cauliflower leaves sauteed in olive oil add a fresh green flavour and cut back on kitchen waste.

Preheat the oven to 160°C fan / 400°F. Tip the cashews on to a small baking tray and roast for 8–⏱️ 10 minutes until golden. Discard the tough, very outer cauliflower leaves and put the remainder on a baking tray, drizzle with olive oil, add a pinch of salt and pepper. Place on the lower shelf of the oven for 8–⏱️ 10 minutes until crisp and golden. Remove both trays and set aside.

Bring a pot of water to the boil and add a pinch of salt. Add the pasta and cook according to packet instructions.

While the pasta is cooking, tip the roasted cashews into a high-speed food processor, along with the remaining ingredients for the sauce. Blitz until smooth.

⏱️ 2 minutes before the pasta is ready, add the cauliflower to the pan to cook with the pasta. Bring back to the boil, then drain, reserving a mugful of the cooking water.

Return the pasta and cauliflower to the pan and add the sauce. Add a generous splash of pasta cooking water and cook for ⏱️ 1 minute over medium heat to create a glossy sauce that coats all of the pasta and cauliflower.

Divide the pasta between bowls and top with the cauliflower leaves; enjoy immediately.
