Press the chicken into the mixture of the cajun seasoning and flour and shake off any excess.

Heat the oil and melt the butter in a pan over medium heat, add the chicken and cook until cooked (165F/73.9C) and golden brown, about ⏱️ 3-5 minutes per side, before setting aside.

Add the onion, celery, and bell pepper, and cook until tender, about ⏱️ 5-7 minutes.

Add the garlic and cajun seasoning, sprinkle on the flour, mix, and cook until fragrant, about a minute.

Add 1/2 cup of broth and deglaze the pan by scraping up any brown bits from the pan with a wooden spoon as the broth simmers.

Add the remaining broth, cream, and parmesan, bring to a simmer, and let the cheese melt into the broth, before adding the chicken (and any juices), and simmering for ⏱️ 5 minutes.

Season with salt and pepper to taste, mix in the parsley and green onions and enjoy!
