Preheat oven to 350°F. Toss together bread and oil on a large rimmed baking sheet. Season with salt and pepper. Sprinkle with cheese. Bake, stirring halfway through, until golden brown, 14 to ⏱️ 16 minutes. Cool completely.

Meanwhile, melt butter in a large Dutch oven or pot over medium heat. Add onion, garlic, and asparagus and cook, stirring occasionally, until asparagus turns bright green and begins to soften, 5 to ⏱️ 7 minutes. Add cream and just enough stock to cover asparagus; bring to a simmer. Cook, stirring occasionally, until vegetables are soft, 15 to ⏱️ 20 minutes. Puree soup, in batches, in a blender until smooth. (You can also use a stick blender directly in the pot.) Season with salt and pepper. Serve topped with croutons and garnished with chives and dill.
