Prepare the apples: Preheat oven to 350 degrees F. Lightly coat a baking dish with cooking spray. Wash, dry, and core the apples, leaving the bottoms intact. Brush apple flesh with lemon juice. Arrange apples in the baking dish.

Make the stuffing: Toss cranberries with granola, brown sugar, cinnamon, and nutmeg. Spoon into apples and top with butter pieces.
