Preheat oven to 400°F. Heat oil in a large Dutch oven over medium heat. Add onion, carrots, celery, and thyme. Season with salt and pepper. Cook, stirring occasionally, until tender, 8 to ⏱️ 10 minutes. Add mushrooms and increase heat to medium-high. Cook, stirring occasionally, until mushrooms begin to soften, 3 to ⏱️ 5 minutes. Add garlic and cook, stirring, ⏱️ 30 seconds.

Add rice and cook, stirring, ⏱️ 1 minute. Add stock, half-and-half, and green beans. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened and rice is almost tender, 8 to ⏱️ 10 minutes. Stir in chicken and lemon juice. Discard thyme sprigs. Transfer mixture to a 2-quart baking dish.
