Cowboy Nachos
These cowboy nachos are loaded with seasoned beans, meaty brisket, and plenty of cheese and pico de gallo. They're perfect for a crowd on game day!

Preheat the oven to 350°F.

In a medium saucepan, cook the bacon over medium heat until the fat has rendered and the pieces are almost crispy, about ⏱️ 5 minutes. Add the garlic and jalapeño (if using) and cook until fragrant and the bacon is crisp, 1 to ⏱️ 2 minutes more. Stir in the pinto beans, salt, pepper, a few dashes of hot sauce (if using), and 2 tablespoons water. Cook until the beans are warmed through, about ⏱️ 3 minutes. Remove from the heat and set aside.

In a large skillet, heat the canola oil over high heat. Add the brisket and cook without stirring until sizzling, 1 to ⏱️ 2 minutes, then give it a stir and cook an additional ⏱️ 2 minutes. Stir in the Mexican tomato sauce, making sure the brisket is nice and moist. Remove from the heat.

In a 9-by-13-inch dish, layer half of the tortilla chips, pinto beans, brisket, monterey jack, and pico de gallo. Repeat the layers, but leave off the second layer of pico de gallo. Bake until the cheese is melted on the top and in the center, about ⏱️ 15 minutes. Remove from the oven and spoon the remaining pico de gallo over the top.
