Courgette Fritters
We discovered this recipe when we were trying to use up some leftover courgettes. These fritters are perfect to add to a salad or rainbow bowl. The mint brings out a lot of flavour and adds a wonderful freshness. These make the perfect light dish for lunch or dinner or could even be eaten as a starter.

Grate the potatoes and courgette and place in a clean tea towel or nut milk bag.

Squeeze out the water to dry the ingredients. It is really important to do this part thoroughly in order for the fritters to hold.

Once all of the water is removed and you are left with a dry mixture, place it in a bowl and add the apple puree.

Add the flaxseed, crushed garlic, chopped mint and stir thoroughly, adding salt and pepper to season.

Place a little olive oil in a pan on a medium heat. Pick up handfuls of the mixture (give it a final squeeze to drain off any further water) and squeeze into circular fritters.

Place the fritters in the pan, turn down the heat to low and flatten down. Repeat with any remaining mixture - you will need to fry these fritters in batches.

Allow the fritters to cook through slowly for about ⏱️ 5 minutes on each side.
