Courgette Chips
These courgette chips are deliciously crispy and great for all of the family. We like to make them for a pre-dinner nibble and serve them with a big bowl of cashew cream to dip into.

Slice the courgettes into circles, no larger than 1cm thick.

Place the courgette slices into the almond milk and leave to soak for at least ⏱️ 1 hour.

After ⏱️ 1 hour, whisk together the flour and sparkling water to create a smooth paste.

Place a pan over a medium heat and pour in enough sunflower oil until you have a thin layer.

Once warm, remove the courgette slices from the almond milk and place into the paste. Mix until they are well coated.

Shallow fry the courgette chips, a few at a time, for ⏱️ 3 minutes on each side until golden and crispy. Once cooked, remove from the heat and place onto a serving plate while you cook the rest.

Serve the courgette chips hot, with a large pinch of sea salt, sesame seeds and lime juice squeezed over the top.
